The Spread is the realization of the collective dream of four life-long restaurant employees coming together into one cohesive unit to share with guests their love and passion for food, drink and good times. Bartending for most of their combined 80+ years in the industry, owners Andrey Cortes, Chris Hickey, Chris Rasile, and Shawn Longyear had paths that crossed throughout their years in the restaurant biz. Personally and professionally, the group forged a bond between the partners that has culminated in the October 2012 opening of the Spread.
Executive Chef Carlos Baez, a true “chef’s chef”, having honed his culinary skills from years of cooking in some of Fairfield County’s most intrepid restaurants, pours his creativity into The Spread’s ever-evolving menu. “Influenced by all culinary corners of the world”, Chef Baez travels the globe presenting inspired dishes such as; Grilled Portuguese Octopus; Pork Belly with potato cake, black garlic, and pico de gallo; Ricotta Gnocchi with braised veal and sage veloute; Brick Chicken served with Anson Mills polenta; and Pan Seared Salmon with arroz verde, English peas, and sautéed ramps.
The Spread’s large bar area is home to the team’s signature creative cocktails, while craft beer and an approachable wine list round out the beverage program. Check out SoNo’s killer Sunday Bruch, only as The Spread can do it.
